When we went to Kazu the last time for dinner, we found out that they serve Ramen for lunch and we agreed we have to come back for that.
This Ramen had uniqueness from chef Kazu, I could tell from the topping and the broth. At first, I felt the soy sauce base broth was peppery and salty but as I was keep eating it became addictive and didn't taste salty at all. The braised porc belly was very tender and the hard boiled egg was cooked perfectly. The noodle was different from the one in Japan though, it was firm and had good fravour.
My hometown is one of the famous city of Ramen and I have had so many Ramen before, so I don't say Kazu's Ramen was the best I've ever had in my life but I really enjoyed it. Probably the best Ramen I've had in Canada so far.
We sat down right in front of chef Kazu and had chat with him sometimes and found out that he has French cuisine background which I noticed from his food presentation.
When I said to him how busy this place is all the time, he said to me "I have no idea so many people are coming to this place...I don't get enough sleep..." with a smile and puzzled look. I though it was pretty funny that he wonder why lot of people like his food. I bet that lots of restaurant owners will be envy about that.
So, why lots of people line up outside of this restaurant? According to D, he said it is the total experience. Food is great of course, but it's not just that. The atmosphere, the energy, cheerful servers and the chef Kazu. He must be very tired cooking all day(without sleep) but he is always very friendly, greeting the customers and asking if they like the food. I was amazed that one of the server who served us the last time and Kazu remembered us on our 2nd visit(I admit that we have distinctive looking though). All those in total, people enjoy the experience which you don't get from anywhere in the city.
As we were about to leave, I asked him about the vacation he was talking about earlier which he is taking soon and he said "I wanna just sleep, just sleep..." with a smile.
