Another disappointment from a pastry shop....

The one in a photo is the raspberry mille feulle, it looks very pretty and that was the reason I picked it and we got pistachio éclair as well.
The eclair had some green icing on top and some pistachio but didn't taste like pistachio at all. The custard cream inside was okay.
And the mille feulle, the cream was tasted great but again, I didn't taste any of raspberry. And the pastry wasn't flaky, it was soft. I didn't impressed by their pastries at all.
Why we are always disappointed with pastries from pastry shops? Why it's so hard to find decent pastries in Canada?
